Citrus, Citrus, and MORE Citrus!<\/h2>\n\n\n\n

With the market closed for the winter I was able to concentrate on turning a variety of citrus fruits into jam. Which was a good thing because winter is when all the citrus trees are bearing their fruit. I made all of the old favorites, orange, Valencia orange, tangelo, and kumquat. I also had some new fruit suppliers this year, so I was able to add two more flavors to the jam lineup: blood orange and tangerine. Altogether, I made over 200 jars of citrus jam this winter! Now I just hope I can sell it all. Tallahassee Downtown Market, here I come!<\/p>\n<\/div><\/div>\n\n\n\n

Samantha’s Blood Oranges<\/h2>\n\n\n\n

My friend Samantha provided me with some blood oranges from her tree. The dark color in the flesh of blood oranges is due to the presence of anthocyanins, a family of pigments common to many flowers and fruit, but uncommon in citrus fruits. The flavor is definitely that of an orange, but almost with a hint of raspberry mixed in.<\/p>\n\n\n\n

There are several varieties of blood oranges. Some are dark red all the way through the entire flesh of the orange and some are more mottled, like Samantha’s. After doing a little online research we concluded that Samantha’s oranges must be the “Delfino” variety. The jam is sweet and a little tangy, and everyone who has tasted it absolutely loves it. It should do well at the market.<\/p>\n<\/div><\/div>\n\n\n\n
